It’s fair to say that I’ve gone a bit “Crazy for Japan”.
Train travel, capsule hotels, souffle pancakes you name it. It’s a place I’d like to visit but for now, I just have to contend with making my own learning experiences.
Today was raining all day and I didn’t leave the house. Andrew was in the study working on his last day of work before he goes on five weeks of holidays. Yay!
So I headed off to the supermarket to stock up on supplies. Today was the day I was going to make this super light wobbly cotton cheese cake.
I found a video on YouTube with the recipe and followed it exactly. The trick with this cake is that you beat the egg whites as a meringue and fold it gently into the mixture.
I forgot to sieve the mixture so it ended up lumpy….
The other difference is that you bake it in a water bath and it takes over an hour to bake. Unfortunately I didn’t leave it in the oven long enough. When I tested with a skewer, it came out clean and I thought the cake was ready.
Unfortunately no. I noticed the edges were cooked but the middle was still uncooked. I put it back into the oven but by that stage, it had crumpled into a mess.
However, how delicious was the batter! I still cut a piece and then microwaved it a bit to cook the soft bits. It was delicious!
I’ll still end up baking another one to give it another go. The alternative is to head into Melbourne one day and go to a Japanese bakery like Uncle Tetsuo’s on Swanston Street and buy myself one like this. 👇
Researching on Japanese cafes, restaurants and supermarkets, I see that there’s no shortage in Melbourne. There’s a place that serves Japanese breakfasts on weekends in Collingwood which is another place to try out. It’s called CIBI but it looks like I’ll have to go there by myself. Andrew is not a fan of Japanese cuisine and does not eat seafood so it’s out of the question.
Mmm. 🤔 Now when can I go?
